Pesto Recipe

You can never go wrong with homemade pesto! This recipe is great if you have leftover spinach or rocket in the fridge. Pair that with a combination of herbs and you've got a delicious pesto!
Ingredients
- 1 garlic clove minced (or 1 tsp of crushed garlic)
- 1 handful of rocket or spinach
- 1 handful of herbs (e.g., parsley, basil, mint)
- 1 handful of nuts or seeds (e.g., walnuts, pine nuts, sunflower seeds, or pumpkin seeds)
- 1 handful of grated parmesan cheese
- 2 tbsp extra virgin olive oil (canola oil will work okay too if you don't have olive)
- 1 tsp of lemon juice
- Salt & pepper to taste
Method
Combine the top 4 ingredients together into a food processor or mortar. Pulse/mix until combined.
Add extra virgin olive oil and lemon juice. Then add salt and pepper to taste.
Notes
Pesto is a great way to get some colour and flavour into your eating. You can spread it on wholegrain bread or crackers, stir it through pasta, or add a dollop to your salad - the options are endless!
Pesto also packs a nutrient punch. Healthy fats from olive oil and nuts or seeds, plus the vitamins and minerals from your vibrant greens.
Another great thing about pesto is that you can use a combination of different greens - it doesn't always have to be basil! Mix it up and see what combinations you like.
