Beef Kofta Inspired Pitas

This is a favourite meal in my household. These pitas are versatile and cater to everyone’s taste preferences, and any leftovers are perfect for lunch the next day! To step them up, you can make a yummy tzatziki or replace the pitas with some homemade flatbread. 

Dietary Adjustments

This meal can be customised to accommodate various dietary preferences, such as vegan, gluten-free, and dairy-free. Use gluten-free pita bread; switch the beef out for beans or tofu.

Ingredients 

Serves 4

Beef 

  • 2tsp olive oil 
  • 1 white onion, diced
  • 1 garlic clove, crushed
  • 1 chilli, diced (optional)
  • 500g beef mince
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 1 pinch salt 
  • 1 pinch pepper

Pitas

  • 8 pita 
  • 1 cup cucumber, diced
  • 4 small tomatoes, sliced
  • 1/2 lettuce head, shredded
  • 1/4 cup hummus 

Method

  1. Heat oil in a pan, over medium heat.
  2. Saute onion, garlic, and chilli, if using, until soft.
  3. Add mince to the pan. Cook until browned. 
  4. Mix in spices. Simmer for 5 minutes.
  5. Cut the pita bread in half to create pockets. Toast.
  6. Fill pita with mince mixture, cucumber, tomato, and lettuce.
  7. Hummus can be spread on pits before filling, dolloped on top of a filled pita, or enjoyed on the side.
