Avocados have dropped in price here in New Zealand! What better way to celebrate that than with a couple of delicious recipes? 

Avocado Chocolate Mousse 

Ingredients 

  • 1 avocado 
  • Splash of milk (plant-based or dairy)
  • 2 heaped tbsp of cacao or cocoa powder 
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla paste 
  • Pinch of salt

Method

  1. Cut the avocado in half, remove the pit, and scoop the avocado flesh into a blender or food processor. Add the remaining ingredients and blitz!
  2. Taste here! Add more honey or maple syrup if you prefer it sweeter. If you want more chocolate flavour, add more cocoa/cacao
  3. Spoon into serving dishes such as ramekins or shot glasses  
  4. Refrigerate to firm up the mousse and then serve

 

Guacamole 

You can't go wrong with classic guacamole! Serve alongside tortilla chips, on top of nachos or with eggs on toast. 

  • 2 ripe avocados, peeled, pitted, and mashed 
  • 1/4 - 1/2 red onion, finely diced 
  • 1 lime or small lemon, juiced 
  • 1 tomato, diced (or 5 cherry tomatoes, quartered)
  • Optional: 1 tbsp finely diced jalapeño, 1 fresh chilli finely chopped, 1 bunch fresh coriander chopped  
  • Salt and pepper to taste

Method

  1. Destone the avocados and scoop the flesh into a large bowl and mash with a fork
  2. Add lemon/lime juice, diced red onion, tomato, and optional ingredients of your choice! (jalapeño, chilli, and coriander)
  3. Mix ingredients together and season to taste with salt and pepper
